AVOCADO PASTA

INGREDIENTS

  1. Pre-boiled pasta
  2. 1 medium tomato, diced
  3. 1 spring onion, finely sliced
  4. 1 large ripe avocado
  5. 1 clove finely grated garlic
  6. 2 tbspns vinegar
  7. Salt and freshly ground pepper, to taste

METHOD

  1. Mash avocado in a large bowl.
  2. Stir in the garlic.
  3. Add the vinegar then season with salt and pepper, to taste.
  4. Add pasta, tomatoes, and spring onion then toss until the pasta is completely coated by the sauce.
  5. If the sauce is too thick, add a little pasta water.

Serve hot with beef stir fry!
